We developed this Chiles and Chilis Blog to share with you the many, many well tested and time tried recipes that were collected and first refined by my Grandmother.

Through over 30 years of teaching cooking, I have refined these recipes so that they are very easy to understand.

In many ways, this blog is a "window to the world" of my teaching techniques for the most popular Southwestern and Regional Mexican recipes I have been teaching.
